Gesture can be any form or shape you want so long as it does its intended purpose of capturing the flow or movement of the body. It doesn't have to look exactly like how the teachers show it, that's just the ideal for their purposes of instruction. Do whatever kind of scribble shorthand sticks to your brain and have the intuition to know if it's too stiff, I mean, you'll see it.
Think of it like you're doing roughs for an animation. If you have to draw 30 figures for a frame would you painstakingly draw each one really detailed for your first pass?

Adding onto what another anon already said, 30s - and maybe even 1m - is way too short for beginners and only trains them to rush their drawings without thinking. Gesture deserves more thoughtfulness than that, especially at the beginning

Also Steve Huston is the only person who knows how to explain it beyond "feel the movement"
