Veggies are quite tolerable (even delicious) if they're prepared in ways that compliment them:
Dark greens: go well in a salad with ranch dressing, or blended with orange quice into a smoothie. Also as a side to roast beef and baked potatoes with thousand-island dressing
Carrots: easiest to consume shredded. Carrot salad (made with mayo, a bit of vinegar, sugar and raisins) is pretty nice and chewy. Skinning them before consumption is highly recommended.
Broccoli: sliced, with ranch dressing. or lightly steamed and with cheese
