I fully get what you mean, I actually briefly considered outer banks/tidewater and lowcountry as a separate thing, and lots of the other countries are also very big to represent as just a whole (like Japan). But ultimately, to keep from either splitting regions up into extremely tiny areas that would struggle to get recognition by most people, and to keep the scope of the project small, sacrifices had to be made.

The 20 final ones are from an even bigger list, but cuts had to be made to keep things reasonable. Things I considered were not only the region's cuisine, but also MGE content that would easily fit within it (as in, local monster girls), and how that country could be depicted in a fantastical way. Some regions and places struggled hard in the latter two. Some places that /just/ didn't make the top 20 for one reason or another are, Canada, Brazil, Spain, Thailand, and Korea.
