My opinion is very similar to >>30369802 comparing vtubers to wrestlers and talking about kayfabe is all fun and games. I certainly think that some vtubers do give us a slice of their personality and hold back a bit more than others, simply because it's more "entertaining," while others are John Cenas, what you see is what is what you get. Of course even then they have to act differently then they would in real life and a lot of them do still show a bit of what they must really feel when they tell rrats to stow it (I'm thinking about Mori's reaction to everyone saying Kiara her kid and calling her daddy/mommy) or when they concernfag over people giving supers, but I don't think it's like how some people have a "customer service voice" and way of talking to people when they're on the job that's not just them being polite, it's completely different to what they actually think and act.
It's more like, as Risu says, sometimes when you're with your friends you want to be the funny guy at the center of the conversation so you act a little differently. That's the big appeal of vtubing, they're not quite entertainers, they bridge the gap between David Bowie and a mate, you shouldn't think about them as your best friend but they don't have the professional distance that there is between a fan and a celebrity.
