The egg we see surrounding a humpty egg is not the original egg though (rather its a bigger shell she makes to trap men), presumably the original one is smaller (though it is noted jubjub eggs are big).

A day late in replying to this, but actually the profile notes that when they reform a egg shell to trap a man the result looks like an "enormous egg" so its fair to say they don't shrink the man.

Humpty eggs hatch from eggs that are already "big" but basically the shell they can reform can be a lot bigger.
