I really want a Chimera wife but the whole multiple personalities switching up constantly is sorta scary. I guess it's fine since in the end they all love you the same but what if you are cuddling in Goat persona mode, then it switches to dragon and suddendly backs off trying to look dignified, or switches to lion and you get assaulted. On the bright side, you get multiple points of view for every argument ever and it's a 1 wife harem (i like the potential of harem but i'm a staunch believer in monogamy)

The point of being a jack of all trades is just that, being a jack of all trades. Chimaeras have a wide host of inherent abilities in combinations that most monsters couldn't dream of having without a lot of magical talent and perhaps decades of work. Chimaeras though get to take advantage of tons of skills and juggle them with ease, with the only trade off being that each power is a "bit" weaker on average than that of the original creature.

Going into theory territory, but having aspects of so many different types of monsters may well make it easier for them to learn spells suited to those monster types as well.

Also, while various spell arts that a baphomet may or may not be able to master may well give the same benefits, we know of at least a few skills the "average" chimaera combination has that a baphomet doesn't. Aside from the "gimmicks" you mentioned, they also have the lion-like flexibility and reflexes, plus a body nearly as durable as a dragon (baphomets are no doubt durable but nothing's been said comparing them to dragons in that regard).

Oh, and wing hugs, can't forget wing hugs.
