First you need strong weapons and armor made from demon silver, after that you just have to read and learn about the monster your hunting and their weaknesses

>Minotaurs can be taunted into a rage that'll tire themselves out leaving them open for counterattack
>Ocelomeh use ambush tactics like their Jinko cousins but use cumbersome strength weapons that you can easily dodge
>Lizardmen and Salamanders are both honorable warriors so you can cheat or use ice attacks like for Hellhounds
>Liches always have a phylactery so just find it and break it, don't try to fight her head on
>Vampires are weakened by sunlight and numbed to pleasure by fresh water, don't use garlic
>Zombies are slow and try to use numbers/spook tactics
>Harpies always try to swoop down to catch you, but dodge this and they'll probably knock themselves out from hitting the ground
