And if it's an equilibrium, if you change the composition of the air above water to something that contains less gaseous water (steam), you will provoke some liquid water to turn into gaseous water (steam)!

So if you blow above hot water, it will evaporate faster, and the liquid water will get cooler.

In regards to bitter matcha, it means the water was too hot or you went wild and whisked it for way too long (which would require impressive amounts of stamina). You know you got it right when the liquid has a taste to it like someone added msg to it but without the salt. Smell should be strong and taste should be pretty green with a little bit of sweetness. No sugar/milk necessary.

I've tried various things, and the only guaranteed way to do it with storebought matcha (usually vacuum packed) is to pass it through a mesh/sieve beforehand. Obviously doing this every time you want some tea would take up way too much time, so if you just presift in small batches it works fine.

You can get a special container for it if you want (chaki or natsume I believe?), really anything that will hold enough tea for maybe a week or so will do. It works out better this way anyways since digging around in a container full of compacted matcha with the scoop usually results in massive clumps and sometimes a mess.

There are some suggestions that involve putting a little bit of water with the unsifted matcha, mushing it around with the whisk then pouring in the rest of the water and whisking as usual. You would have to spend quite a bit of time just getting the lumps to dissolve this way, and usually what ends up happening is a bunch of matcha gets stuck to the whisk.

I've had 'the good shit' in a couple of high quality sushi restaurants, and japanese markets, and no, it shouldn't, if you make it right. Oddly, the type of container used affects the consistency and flavor of it, in my experience.
