"All in one" kitchen knives are basically chef knives. Beyond that you get knives for very specific purposes like carving meat, chopping bones or peeling things and aren't too great other tasks because of shape/length/size/weight limitations. If you like to cook there is a knife you ought to always have as your #1 go-to knife and it's a chef knife. Santoku knives are just the japanese version chef knives but are essentially for the same purpose.

Also, Santoku knives are very good for cutting vegetables.

Considering soccer mom lifestyle, they're probably not going to be doing any kind of specific knifework and are mostly going to be chopping lettuce and potatoes for their families so I wouldn't say it's a stretch from the truth. A chef knife does handle most of the things they would need to do. The soccer moms, that is. Chef knives are truly the medium knife that serves most needs and can be used for stuff other knives are specialized for and you wouldn't have such a bad day with them like you would if you were trying to carve a fat turkey with a paring knife. There's pretty much nothing a chef's knife couldn't do. It might not be 100% efficient, but other knives can't come close to being as multipurpose as a chef's knife.
