as for gameplay quality, you play this games for the same reason you play darksoul and other buttpiercing games : for the rage, for the hubris to defeat an unbeatable foe, for the thrill when you only have one life left at the last boss, etc
it's a niche genre, but you may enjoy it

i would recommend embodiment of the scarlet devil, not the easiest, but the one with the most simple gameplay
there are also fighting games, lot of funny shenanigans there, and easier to completebest route is cirno, two epic fight against okuu and goliath doll
don't like games ? there are also several official doujin, that range from 4koma to slice of life to detective stories, with lot of japanese folklore
there is also ton of non-hentai, not even echi fandoujin
and several anime of actually decent quality that surpass some official studio cough cough deen cough cough

The fundamental difference between touhou and kancolle is that one was made as a passion project by one drunk jap, and the other was made by a of a subset of a giant corporation that didn't give a shit about it until it became popular enough to make loads of money, and then it became shilled to all hell.
Touhou has 15 bullet hell games (not counting the demo for 16 or the spin offs) made by the same guy and then several official fighting games made by him and a group of doujin game makers, If he wanted to sell out and ask some company to make a gacha game with his creation he would be loaded, but he's content with making a quite decent living off doing what he enjoys, not to mention the literal thousands of arranges of themes from his game and the hundreds of doujin games without any connection to him made by people who love what he does.

DMM on the other hand has a shitty browser gacha game, a shitty port of the browser game with a different campaign as a full price vita game, and then an arcade game where you buy cards of the girls from the machine and hope you get a good one so you can pretend to be an admiral but this time in 3d, and then no fangames allowed because they know the first thing anyone would do is make a version of their game but without the cancer. Its music isn't terrible but it doesn't have the catchiness or staying power save for 2 or 3 songs.

To conclude, Touhou was built by the hard effort of one person (with some help of course) and has a world all his own which while not being the most detailed or masterfully written, at least has some semblance of care put into its creation, and Kancolle was destined immediately for the garbage pile from the moment it was conceived, only being saved by the fact that so many self proclaimed otakus love eating from the trash that it was pulled out and sold to them like it was actual art.
