I'm a second-year university student and my professors, especially the native Japanese speakers, constantly reassert the importance of 敬語 and how people will be offended or taken aback if you speak with them too casually, but all of my real-world knowledge of the language seems to suggest otherwise.

I met one Japanese guy in Honolulu who is two years younger than me and despite me awkwardly calling him 様 at first, he immediately used さん when speaking to me. We still speak occasionally and he is not shy at all about correcting my Japanese (which is terrible, granted).

I've recently been reading a lot of Oshimi Shuzos works. Finished 僕は麻理の中 and ハピネス, on volume three of 血の轍 atm.
I hugely recommend it to anyone sitting around N2 who wants to read some compelling content.
I think I only needed to use a translator 5-10 times through all 10 volumes of ハピネス. It must just be his style or something, but I dont know any other mangaka whose works are this easy to read outside of SOL.

This is gonna sound peak Burger-Slurper effect shit, but once I got past the "have tons of easily memorized, extremely common stuff to learn" level, I found it extremely hard to get noticeable improvement on either my reading speed or my ability to comprehend sentences without having to think a lot about them. I could see the number of cards on my mined deck growing at about 30-50 cards per day back when I was reading for 4 hours per day, but I was still struggling with a lot of stuff, despite the fact I spent like all of January-August under this routine, and even had many weeks where I spent 6 hours a day every day reading. It's probably gonna sound illogical, but I think that there's a certain limit for how much one can improve at recognizing vocabulary or at reading comprehension, or anything else related to language learning per day. The only thing that I think is unlimited is simple memorization (as in, memorizing readings for kanji), but even that kind of starts to get looser the more one has to rely on long term memory instead of short-term memory.
