Zun is not good at plots. Or pacing. Or any writing skill other than making entertaining characters (and he flubs that up half the time.) There are really only two reasons to read official manga: lorefagging and/or you like reading the characters bounce off each other. WaHH has a few good character chapters (any with Suika, the Kogasa blacksmith chapter) but if you're reading for the story it pretends like it's going to have (Kasen's quest for her arm) you'll be disappointed.

Status quo is the highest order God in Touhou and this applies to all of its manga. Nothing major can happen because that shakes up the natural order, and Gensokyo's entire existence is heavily structured on maintaining the balance. If that falters, everything falls apart, which is why stakes can't happen outside of the games.
You don't usually come for a gripping narrative or some big game-changing twist, you come for the character interactions, variable artwork and actual indicators of characters with character, something you almost never see in the games unless you're one of the main two heroines or reoccurring.

The only good manga is the collective fairy manga. It has character development, lore, cuteness, progress, hotbloodedness, and not just tied into the games but spawned a game of its own.(Caused by the protags pissing off Cirno so much that she went around kicking their asses). There's even stuff like them changing homes that gives a continual time flow instead of keeping the status quo. The journey from being the worlds weakest creatures, getting stomped on by Reimu and everything else all the time, to making friends, to essentially becoming Reimu's children, and even being praised by her is heartwarming. The artist's other doujinshi about them are nice as well.
