I think thread culture plays a lot into it, greentexters are called out as crossies and newfags on the rest of jp. This forces those that want to write to write proper stories which leads to a different culture of writefags in general. I'm not very sure about those writers, but the choices aren't just hfy shit and 'you see wife you get raped' with extra steps.
The ones I usually like to write are darker romance stories, sometimes even rather light hearted ones, but in all there's some risk and danger in the setting that gives stakes and allows for a proper climax.
Not that there isn't that in MGE as a setting, but a lot of recent lore goes out of its way nerf the more dangerous aspects from what I've seen. There really isn't much stakes when all monsters seem to negate any real threats with literal reality bending and time traveling powers, and logically monster mana is just the cure all to everything. Any story with those kinds of stakes are going to be human centric which isn't really the point of mge and won't make a good story.
I am personally stumped on story ideas when I think about so I just stick to smaller greentexts like when I wrote that blackknight story, or the not!Steve Erwin one offs

I don't think conflict needs to be "dark". Especially considering most monster girl settings are built on classic jrpgs. There just has to be some form of conflict or problem. I can count the number of conflicts I could get away with in MGE on one hand without doing some schizophrenic deep dive. So basically they hired some edgelord writer for one of the chapters of the game. The dumbass had the bright idea to make a plot twist that the MC was just a human brain shoved in a weird mecha worm, which retroactively screwed all of the writing until that point since the MC is not only treated as a humanoid being, he periodically fucks the bioroids and is shown to do normal stuff like stroking tails/ears and using normal keyboards. To have him be a goddamn worm was impossible and made everyone in the entire cast retarded. This got quickly retconned, with the CG showing the body got replaced to one he was mostly human but got infected with a parasyte instead, the dialogues altered to make more sense of the situation and the plot itself to one that they needed to cure him out of the infection ASAP

FGO can be considered a stereotype of everything that can go wrong and right with a gacha. They need to pump out content constantly and need to produce characters a lot. And most writers that get in this industry don’t truly know how to adapt themselves to this style. They have to write all those chapters following a fast deadline and as far as we know (specially considering Sakurai chapters) there isn’t much talk between them which causes a ton of inconsistencies
It really only survived because it had a diehard fanbase holding it in place in the early age, they got rewarded as midway through the hope paid off, and then it grew so big they stopped caring about that original fanbase and can survive with minimum effort now.
