Drawings have a certain objective level of being good. You need to actually make an effort to get good at drawing. Now for writting? Anyone, anyone can write. And often people that has this mindset write fan fictions. And they end up badly. And good authors generally can make out well-elaborated stories by themselves. When you actually are good at writting, I suppose that creativity flows throughout you, and you feel unable to limit yourself to some series or something like that.

Anyone can draw. Anyone can write. To do either one well enough to describe something exactly how you envision it in your head takes at least some level of skill. They're different mediums. Some people like one better than the other.

As for me, I feel that when any type of story is done well, it's better than any drawing could be.

Many doujinshi are 100% text, too. You're missing the real difference. Doujinshi are actually published. You need to put your own money behind it just to create one. Doujinshi are actually sold. You can even make money off them if you're actually good. There's positive and negative selection that weeds out much of the crap.

The funny thing is, fanfics used to be that way, too, back before the internet, when you had to print things to let other people read it. They didn't even mean "derivative works" originally, just something you distributed within the fandom. Basically, exactly what doujinshi are to this day. But then the internet took over, and with it kids and talentless idiots. They started writing solely derivative fiction because they had no creativity to create something of their own. They created circlejerks that discouraged real writers from participating. They published gigabytes of unredable repetitive crap and scared off readers. All of this gave the term its current bad reputation.

I read doujinshi because I've seen many that are good and that I greatly enjoyed. I have not seen a single good fanfiction in ages, so I'm not going to waste my time bothering with it.
