I've been drinking a lot of tea; but mostly sencha, matcha, and gunpowder. I really like the earthy flavor of green teas, but I want to try some others.

I've had Jasmine and Citrus teas, but I wasn't really a fan of them. I've also had some white peony, which wasn't bad but I think I want to try some darker teas.

Are there any black teas that are similar to gunpowder? What should I look for when buying black teas?

Electic kettles in Europe have a different look and to me, I think they look odd. I don't know how easily they can maintain certain water temperatures but they're both mostly used for making tea.

I happen to have both an electrical kettle with adjustable temperature and a regular one. I measured the accuracy of the temperature and it was either really accurate or off by less/about 1 degree depending on the weather.
This doesn't really help me much though, as I realized that different teas, like for example 2 different green teas, will already require different temperatures deviating from the programmable temperature to bring out the best flavor.

I read a few books about tea tradition (especially on Chinese) and the practice of judging the water temperature either based on time or the size of the bubbles in the water struck me as rather beautiful. So that's what I do most of the time and I've gotten pretty good at guessing the accurate temperatures.

It's a fun to try if you haven't already.

Depends on what you're drinking. Rolled up leaves need room to unravel, but some stuff like sencha and earl grey can be okay in bags (although some people will say otherwise). If you're buying bags, you should look for ones that give at least some room for the leaves to expand.

I would recommend the Bonavita Variable Temp Goosneck. The spout makes pouring control very easy and you can pour from high up to oxygenate the water. Also, getting it within 1 degree of the programmed temp is great for delicate green teas.

You see some tea elitists who only gongfu brew, some use strainers. But a teabag is just a disposable strainer. Like the guy said though, some leaves need more room than others. Those that due will have less in the bag thus weaken the taste. I would just get a decent sized tea ball. Mine was small and I recently but a Lishan Oolong in there and it actually popped open from the leaves opening.

You are mixing the matcha with the water right? Or are you talking about a sencha/kukicha/genmaicha + matcha sort of deal? Matcha is usually done at about 1/2 tsp per cup of water, then mixed thoroughly with a special wooden whisk and served in a bowl. The nips like it as bitter as possible, but I like to take the ammount down a little bit to bring out some more of the green tea flavors.

With home brewing, I'd go for pour-over, french press, aeropress, moka pot, or immersion cold brewing. Depends on how you like your coffee, and what kind of roasts and flavors you like. French press is more robust and good for dark roasts. Pour over and Aeropress really bring out the flavors in medium and light roasts. The most important thing is always gonna be your grinder, really, if you're buying whole bean coffee. I'm gonna go /ck/ on you for a sec, forgive me. I'm a barista so this is close to my heart - Espresso is expensive. Like, always. I think the cheapest "recommended" espresso machine around the snob school of though is $400 ($300 if you don't mind using more pressure than a regulated machine). Espresso is delicate, and it is really easy to fuck up. That said - even a cheap machine is still nice. Things that always help the flavor are: Fresh roasted whole bean coffee. None of that starbucks "fresh dark roast" crap, it's generally not actually fresh, or consistently roasted. Chances are there's an independant shop near you that roasts their own coffee, but if there isn't - you have the internet.

The foam feature is kinda cool. I wonder if it's actually steaming the milk or just frothing it, though. Steamed milk behaves way differently than just frothed milk.

Rant over, if you wanna experiment with coffee at all I suggest looking at an aeropress, or moka pot or pour over cone. But Seriously, fresh beans will usually help a bit.

It's the same as sencha. Shincha is first flush sencha. Any of it from a reputable vendor will be be good.

There isn't a huge regional difference in green tea, they use mostly the same cultivars everywhere. Now with Northern teas out of the picture mostly in foreign accessible shops there's even less difference, unless you find something unique, like hand picked heritage bush blablah (read: expensive).

I always thought light-steamed meant less flavor until I tried it too. The flavor is still just as strong, it's just sweeter and less bitter/thick really, it's even stronger in some cases. I do like deep-steamed better though.

nah, it's not a matter of washing immediately, it's more a matter of drinking multiple times a day in the same cup, even once washed. It'll eventually stain, even if you're the most dedicated of washers. And china teacups are pretty easy to stain.

Another reason was so that you could cool down the tea, thus reducing the chance you'd crack the cup on a cold day with hot tea. Either way, it started somewhere around the 1600s.

The downside, of course, is that you can no longer put lemon in the tea.

Read some books, try lots of teas, learn to really taste all of the flavors in a tea. It's the same thing you'd do for wine tasting- learn to use all of your senses. Different teas have different mouthfeels, different astringency levels, different aromas, different colors.

Two sencha may taste completely different, one might be more earthy, the other might be creamy or even sweet. Different brewing temperatures could completely change them, too. Mostly, just try experimenting.

If it helps, I keep a diary of every tea I try, and try to pick out the most defining flavors, and write down what they taste like at different temperatures, what they smell like before pouring a little into a cup, and after swirling it. And also what they smell like and taste like for each brewing, for leaves that can be brewed twice or more.
Taking pictures doesn't hurt, either!

It's awesome. There is a strong astringent taste for the first couple of infusions, but its really good. It is so fresh; I've never had anything like it before. Gyokuro tastes like overly sweet sencha. The flavor is strong but there isn't much else special about it given how pricey it is. I don't think it's worth the money and I get the impression it's one of those things where its reputation is mostly built out of expectations from the expense and time involved in cultivating it.
