90% of Hermit chapters are like that, if you hadn't noticed. That goes for Scrollery, too. Every once in a while there's some piece of the larger plot revealed, but it's largely an episodic SoL where nothing particularly important happens. There's nothing wrong with that; your priorities just don't match up with what the series is intended to deliver.

The "two sides" thing is about the nature of Shinto gods and is present throughout the series. Kami have a "nigi" part and an "ara" part, the blessing and the wrath of the god respectively. In this case the hunger god's ara inflicts the debilitating side of hunger, and the nigi instead energizes people to eat delicious things. Whether the original text mentions these or not, that's definitely what ZUN was going for here.

I think in these cases they're fine with it because it's mutually beneficial. They don't freak out in the village at Reisen even though it's pretty obvious she's a rabbit because she sells medicine. At shrine festivals they have the miko right there and know the youkai won't attack their costumers, but I still don't think most of them are comfortable hanging out with them whenever.

Nah, that was just a case of the official story not matching reality - the historical records were either mistaken, or altered for propaganda reasons. I might add that the earliest records we have of Prince Shotoku were written by Hieda no Are decades after his death (who doesn't have the best reputation within Touhou).

Miko definitely seems like she's supposed to look/act androgynous though, for a number of reasons (otherworldly "perfect human", all the yin-yang alchemist stuff, and some of the specific issues she has with Byakuren).

There are multiple titles that get translated into English as "Prince", and most of them aren't gender-specific (hell, Prince itself wasn't originally gender-specific). While there is no record of it happening, a woman in Miko's position would indeed be addressed as Taishi.

And the title of Taishi is so linked to Shotoku that he's listed under Taishi in the dictionary. (i.e. when people say "the Taishi" without context, they're talking about Shotoku)

The whole point of her character is that historical accuracy of Shotoku is being questioned, and so ZUN comments that they were actually a woman but history recorded them as a man. I'm not sure if this misconception is also present in the japanese fanbase but I imagine it easily could be.
