Thinking about it, as great as staying young, having a body of peak health, etc. would be, I gotta say one of the things that really attracts me to the idea of being an incubus is immunity to most forms of disease (or at least an easy way to cure/relieve it).

For those who don't know, last flu season in the U.S. was quite severe (it killed about twice as many people as usual), and for the first time since I was a kid I caught the flu. And damn did it hit me hard. At one point I woke up shivering so hard I was painfully convulsing, and feeling so awful that for about a half hour I truly wanted to die. I'm thankful no means of doing myself in was available/I was in too much pain to get up.

So yeah, I take flu shots now, but I'd take becoming an incubus even faster. There's no sense in hanging onto the deficiencies of the human body if there is an easy way to improve it without really losing anything.

My story is set in a sort of Industrial Revolution era, in a fledgling city-state currently under nominal Order occupation but semi-autonomous rule by an independent but Order appointed official and a number of business and industry heads.

Further, the character and state of the Order is very different from the tired cliche. They are seen by some as corrupt and self-righteous to the point of grave folly. A new faction has emerged of nations equally weary of monsters but opposed to the Order as well.

In the middle of this all, there are those who wish to turn this city-state into a proper Republic. But will the Order and its rivals permit them to establish such self-rule?

Going to echo these two posts. It doesn't have to be all cute and cuddly either as long as it's focused on the core of the setting with a man either having a monster girl enter his life somehow or already being married to one.

Frostcicle is a great example of a writer who pulls this off and some of the more memorable stories for me were about an older guy taking a street Kobold into his home to feed and shelter her, consensual hypnosis with a gazer, a guy fucking his succubus sister and others along those lines. At the end of the day the one thing everyone has in common here is their love for monster girls and it's a no brainer for stories to take that into account.

I don't see the problem here. These horrible things happened before the current DL, hence it's not a part of the modern setting. And the workers that were mummyfied - now get to live eternally in undeath. Throughout the setting there are nods to people in misfortune, but in MGE tragedy is always a forerunner to some form of salvation.

1) A grand overarching story about a human country falling to monster girls, all the from point of view of humans with a lot world building and dozens of characters of varying importances. The meat of the story would be the way the humans experience life before and after the monster girl invasion.
2) The same story but spun in a way that only showcases the Demon general and a few other monster girls interacting with each other as they plan the overtaking, then the fallout of the attack where they each get a husband and do couple stuff together. Certainly, but it should fit the history of the MGE world as we know it. Your version seems to be forgetting a key factor.

Namely, the ancient desert kingdoms were built before monsters existed/were dangerous. They were destroyed by an apophis (likely the first Mamono Lord) and its army. After that they lay in ruins, abandoned by all save for a few monsters loyal to the pharaohs. So there was no period in which laborers would have had to deal with monster attacks, save for that time of war when most everyone got annihilated (at which time trying to build monuments would have been the last thing they were trying to do).

The way I'd handle this problem if I was a writer is by picking a region and using that for all the one-shots in the series.
Lets say the writer goes with a desert region, the first one-shot could be about the Pharaoh and her husband, already happily married and using that as a way of fleshing out the kingdom at the same time as throwing in some comfy feelings. After that you could have one-shots about a guy running into Sandworm, an already married man and Anubis, a treasure hunter attempting to get away from some ghouls only to be caught by one etc.

And then have characters from the past one-shots make cameos in each others and doing the occasional sequel to each one.

One of its aspect that might go unnoticed is how limiting the one-shots to a single region will breed creativity.
Instead of a typical Holstaur one-shot you'd have to make it a desert Holstaur and come up with a bunch of details to add credibility to the character's presence there.
