It wouldn't surprise me if the fandom managed to live for 100 years or so, but yes, everything eventually dies. To illustrate why I think this way, consider the fact that people still happily read books from the 19th century. There are enough things Touhou around already that I'm sure some members of future generations will be interested.

the number of entries into comiket has been consistent over the past few years, Reitaisai is still big, and touhou events are held almost weekly in japan.

Many people left as ZUN kept coming with that "outsiders are eaten" talk. Its just disgusting. The activity is decreasing and in some years only a few of his musics will be remembered.

Yukkuri videos have been extremely popular among Japanese children for the past few years.
Many of them are aware that Yukkuri is Touhou and that's why Reitaisai attendance numbers are increasing.

I'd be surprised to see it no matter the circumstances. There is still loads of fan content even though the source is well past its prime. Even if ZUN died tomorrow I wouldn't be surprised if people were still making at least EoSD fangames 200 years from now, if not religiously consuming the content being produced by an EoSD fangame AI overlord.

I wouldn't be surprised if it was music, a lot of the older groups are either splitting up or advancing their own music careers beyond doujin music.
