A lot of these vtubers had established careers on the internet and were apart of niconama back in the day. Imagine a popular YouTuber that you may have followed a few years ago. They have a sizable following and have an established personality. Now, imagine if they left that and became an anime character and stream video games now. Some things change, but some things stay the same.

As for your question, it is impossible to know. Only the person inside knows how much of his or her personality is being expressed through the character. The big agencies right now give a good amount of freedom to the vtuber on how they would like to play the character. It isn't like the standard idol industry where an individual is being pushed out in a factory-like manner. The vast majority of vtubers are more similar to Twitch streamers and, well, YouTubers than idols.

This is an example of some of the fan interaction they do. They play multiplayer games with them such as Mario Kart, Smash, etc. with them. Vtubers also do zatsudan streams. These are streams where they just talk with chat essentially or talk with a collab partner. These streams tend to feel pretty intimate. Hololive also has meet and greet events where you can talk to their vtubers 1-on-1 (there are pictures of these events, but I'm too lazy to get a picture right now). Of course, that has halted with the coronavirus situation.

The idea of these girls being zoo animals (behind glass exhibits) is a sentiment I've heard commonly. It is honestly up to the vtuber and the way they foster their community. Yes, you will have crazy fans but there will always be the few that ruin the bunch. A lot of fans support their vtuber with good intentions and would like them to be happy while they do their work.

THIS is what is the problem with playing a character vs being genuine. Like I said, I don't really give a shit about idols and crap, and I will probably get bored of these VTubers in a couple of days, but if I DID care, I would like to know that whichever character I follow, if she laughs it's because she genuinely finds something funny and not because the script necessitates her pretending like she does in order to keep her audience entertained.

This is different from a character in a TV series or a show - characters in a show function in their own world, so there's no connection between me and them. I cannot interact with them, so I cannot check their authenticity. Since I cannot check their authenticity, I can just accept it on the basis of what little snippets of their life I am allowed to see. I can like them while knowing they have nothing to do with their VAs because the only interactions the characters have, are with other fictional characters.

But Youtubers exist in the same space as me. They interact with their audience and expect (even if they do not explicitly state this) people to pay them for those interactions - since everybody has to eat. I don't know, maybe you find nothing wrong with people faking every single interaction they have with you, but I do. Which is precisely why I am not really into it, just as I wasn't into maid cafes when I was in Japan. I was simply curious to what extent were those personalities authentic, so I thought I'd ask here.

I literally picked it up two or three days ago, and don't see myself sticking with it in the long run, so you are entirely correct in that assumption.
So far I've only seen MC videos, which, like I said, I was under the impression that all the servers are exclusive to the VTubers, and some other games/interactions/collabs between different characters.

I can hardly imagine the chat feeling "intimate" with couple of thousands people, shooting messages at a rate of 10 per second, but maybe I got the wrong impression here. Don't know, like I said, never was into this kind of entertainment, so I don't have much experience with this either.
