On a surface level I could say "oh it's because she's more 'real'" or whatever and not just a persona.

I think it goes deeper than that for me. Part of it's liking older women.
Another part is her """"personality"""", such as it is acting as an animated qt2.5d wolfgril, seems really down-to-earth and lowkey. You could probably say this extends to her choices of what she does in streams to an extent. For games, I've been seeing her do the rice farming one a lot and non-games I've seen things like tarot reading, ukelele practicing, of course singing, freaking mahjong.
