Relationships can grow and develop more. I think the bigger problems were that the structures changed to be a lot less interactive (there were barely any choices at all in EL) and the stories were just far weaker and more repetitive. All the other characters were completely sidelined if you weren't on their routes instead of everybody getting their own mini arc and some development in GA1. It also doesn't help that each route was extremely thematically repetitive.

I don't know about that, but I remember being able to fuck around wih an .ini file in Eternal Lovers where I could change the resolution in battle mode and story mode. I think the game had widescreen support.

Nevermind, I realized I changed the resolution in-game and only modified the .ini to skip the battles.
The translated images for some reason fucked up the options menu and made the resolution settings disappear. I don't know what was the deal with the first 2 games, but I heard Broccoli sort of revamped the engine for EL. Still, try looking for a config file.
