Using your questions

>Can I have a couple of days off work
In most cases this would mean two days. In order uses a couple can refer to two people together in a relationship or two other things together.
>Can I have a few days off work?
That means they want a small amount of days off work.
>Can I have some days off work?
This is an indefinite amount. It could mean many or few. Usually it falls between but could mean both.
>Can I have a bunch of days off work
This is a large amount. Can be substituted with 'a lot'. Can also mean a group of things together: a bunch of flowers, a bunch of people. A large grouping in other words.
>Can I have many days off work?
Many usually refers to a high amount. However, it too can be indefinite and at times could mean a smaller amount. In most cases it doesn't.
