My recent craving for kidney pie (thank you English fiction), has made me realize convenience stores are actually not as convenient as we think. I can get a t-bone steak or something similarly overpriced and quite foreign any time of the day, but kidneys I have never seen, despite them being part of our culinary tradition as well. And going to small business butchers is a gamble in more than one way.
