Depends on the sect. I’m not sure about Shingon but I know Zen and many Mahayanas traditions aren’t strict vegetarians. Theravada also eat only with alms food and that can include meat. Hindus are the ones that are strict vegetarians.

Also, with Tibetan/Vajrayana Buddhism you can live a normal life, become a monk for a while, go back to your normal life, become a monk again, and on and on and on. It’s because they have an understanding of Buddhahood that goes beyond one’s lifetime.
