I think his point is not that the elite are the best at any particular thing, but that activities are considered to be high-brow/the best simply because the elite are doing them. Consider the examples of 'elite' activities he gives: owning land and artifacts and being old-money. Neither of those are activities, but they are characteristics of the actual elite. You can't buy your way into being old money, and old money sets the standard for what the 'best' is, at least among the upper-middle/managerial strivers. The old money itself doesn't like things because those things are 'the best' but only because they like the thing. It's the folks looking up at them who then go on about things being 'the best' etc.
