If he wants these books to have muh realism, why isn't he writing supplementary material in the form of on-universe cookbooks, sociology books, economic books, political books, and the like?

People praise his descriptions of meals, but they're not even that interesting. He seems to think Medieval nobles ate nothing but roast meat and capons, which couldn't be further from the truth. He could have so much fun describing quirky Medieval dishes that we in the 21st century would find weird, but he doesn't. The only actually interesting and obscure dish he describes iirc is blandissory.

Brian Jacques, a literal children's author who writes about talking mice, has a better grasp on Medieval food than GRRM.

Because he's a morbidly obese, dementia ridden, 70 year old who has taken it upon himself to #ImpeachThePeach. Quite honestly it'll be miracle if he scrounges together the wherewithal to finish his current book, let alone write books that aren't even part of the main series.
