Hard to say. I had a base of like, high school spanish/middle school Spanish and a year abroad in college.

If you also have a base knowledge of the grammar and core vocabulary, it'd be in your interest to read a work in translation and then reread it in Spanish so you don't have to worry about narrative or characters.

I did Savage Detectives as that's my favorite book. You could do it with something smaller like a novella. I think Vargas Llosa's prose is fairly simple, La fiesta del chivo wouldn't be all that difficult although it's also like 500 pages.
