"Priest" just means "elder", in the sense of "a respect person who guides and nurtures their community." I think Mary would definitely fit that description. Then there are figures like St. Priscilla, who were clearly active leaders in the early church and probably helped organise and lead early church services.

Christianity wouldn't have been able to become syncretic with mythology-based religions that have a patriarchal structure, so I doubt it would have been adopted in the Roman Empire as an accepted religion, let alone the official religion. Do you think that Constantine would have had the vision of God which lead to his adoption of Christianity after the Battle of the Milvian Bridge? A female Christian God would not have been easy to spread regardless of future syncretism being possible due to female deities generally being more passive/reserved in worship.

Also, if you think the Marian worship is bad now, try imagining it with a Mother part of the Trinity.
