Because we've evolved the ability to think in abstract terms, consciousness, and higher intelligence. Asceticism is generally done to connect to something spiritual, we have a biological need for attachment, so we strive to achieve said attachment/fulfillment in many different ways.

'What is the taste of bread? That of the first piece I eat when I am hungry or the one I eat after, when I am full? What is the smell of roast? The good, dear aroma that overpowers all other smells and wafts about me as I search in vain for food, or that of the piece left over on my table? And the eye, what does the eye see? I truly believe that everyone can experience the dubious sight of one’s eye and be uncertain as to the faces of those closest to him. Look at the face of a friend you trust and you find a noble visage. You locate the nobility either in the nose or the forehead or “a certain something of the eyes”; look at him when he has betrayed you and you see a vile mouth, a sinister glance, “an expression that’s just not right.” (And if one looks at a woman before and after one has had one’s way with her, the contradiction strikes even more stridently). What is the experience of reality? If I am hungry, reality is nothing more to me than an ensemble of more or less edible things. If I am thirsty, reality is more or less liquid, and more or less potable. If I am sleepy, it is a great bed more or less hard. If I am not hungry, not thirsty, not sleepy, and do not need any other determinate thing, the world is a large ensemble of grays that are I don’t know what but that certainly are not made to cheer me up.'

No.
The prof is the existence of the concept.
A concept of something can't be found anywhere on the human brain -or body, by that matter-. So it must be somewhere else, that place we call it the soul.

From this article, I understand they figured out how the brain processes complex concepts, meaning by this, the reasoning processes. For instance, S > P = Q, or "All humans die, Socrates is a human, Socrates will die". This is called going through judgment "All humans die" to reasoning (new judgments that you didn't know before) such as "Socrates will die".
But this study doesn't speak about the formation of the concept in itself. For instance, take the idea of the "tree". I have just written here "tree" and your mind, instantly, reflected on the imprint for intelligible species, your own concept of the tree, which is SO FUCKING COMPLEX, involves all the trees you've seen in your entire life, descriptions of trees made by your friends and family, trees you've seen in picture or descriptions read on books, poems that were talking about the tree in an analogical view, etcetera.
This concept, the "tree", is unique. Is your own Tree (with capitol T), nobody else has this concept. It's your own, and even though everyone else have a concept of a tree, no one will have the same as yours, ever. It's absolutely impossible, because that concept (like all the hundreds of thousands of concepts you are using in this instant) is formed by your own personal experiences, which change and occur by every milisecond.
That's what I mean when the concept is prof that the soul exists. You can do all the MRI scans you want, but they will just show you which parts of the brain light up when you think, when you use concepts and form judgments and ideas, that's it. But it will never show you where the "concept" is, every idea you have formed in all your life, about everything you know, tree, chair, elephant, pencil, cloud, honor, homicide, death, trial, fair. All those concepts are somewhere, just not in your mind. And I could bet my balls that no one, ever, will explain to me where are they physically located or how are they formed. And that's the beauty of it.
