I can't speak too much for Orthodoxy, as I was raised Catholic, but here's my understanding.
Around 900-1000AD, the Catholic church had established Christianity as the dominant religion in Europe. There were holdouts, primarily in Northern Europe, but for the most part pagan ideology had been diminished to a backwater way of thinking. In 1054, clerics in what was then the Byzantine Empire determined to reject papal supremacy, citing corruption that had taken root within the Roman Catholic church. They made it a point to return to the ideologies that were outlined in the Council of Nicaea, and form a more "pure" form of Christianity. By all accounts, Orthodoxy is a conservative reaction to religious politics of the time. Naturally this pissed off the Pope, who decided to treat them as a bunch of heretics. In almost 1000 years, their beliefs have been very similar to Catholics and honestly even (conservative) Lutherans, however they hold differing politics. An interesting note, to my knowledge there isn't a dedicated central leader of the Orthodox church like the Pope, they instead acknowledge their local bishops as religious authority instead.
