How did the Septuagint go from being the de facto bible of the earliest christians and the version used by the majority of the church fathers to being some sort of niche academic curiosity?

The latins wanted to distance themselves from the east afther the shisum. So probably the use dropped there.

The Roman church had a bunch of Latin translations and attempts to solidify them into a definitive bible like Jerome's Vulgate, which itself had a bunch of edits and editions over timr. Like a lot of things in western Christianity it was already the standard long before it was officially declared a standard or doctrine in a council. The reason for this is very obvious as Latin was the largest literary language in Europe for so long, if you wanted everyone on the same page pun intended you used the same language and Latin was the obvious choice.
