Exodus 7:3-4
>And I will harden Pharaoh's heart, and multiply my signs and my wonders in the land of Egypt. But Pharaoh shall not hearken unto you, that I may lay my hand upon Egypt, and bring forth mine armies, and my people the children of Israel, out of the land of Egypt by great judgments.
Why did God harden Pharaoh's heart? Would the Pharaoh have let the Israelites go if his heart hadn't been hardened?

The translation isn't "I will harden Pharaoh's heart" it's "I will let Pharaoh's heart be hardened"

It's not God making Pharaoh act against his own free will, it's God allowing Pharaoh to act of his own free will, even though it would be better for the Jews if he didn't.

Because the Egyptians had no covenant with God and therefore weren't people, as per the metaphysics of the entirety of the Old Testament.

If you think God hardening pharaoh's heart is bad, wait until he tells the Israelites that they are 100% right to wage an aggressive war against a bunch of disparate tribes in the promised land, and telling them it's cool to kill the women and children.

The Old Testament is a political epic, in addition to being a foundation for morality in society.

Why do you presume to know it would be better for Pharaoh to let them go? You're basically putting your word against the Creator of all things to can grasp the outcome of everything; why should I presume God's way wasn't better than what He had allowed to come to pass?

I also don't see anything "dickish" about God in the OT; it was a time of rival tribes, whole peoples died; whole peoples warred amongst themselves and destroyed themselves utterly.

And what is wrong with that? The Israelites failed to heed this command anyway and suffered from the idolatry the leftover women and children brought to Israel.

The NT does say that to be united with the One True God is to have the Universe fight for you - ergo, the opposite is true; that to stand against God means the universe seeks to destroy you.

Elisha was anointed by God as one of His prophets; if the kids had mocked him without anything happening nobody would have taken him seriously.

Elija was a prophet entering Judah and being immediately tormented by Judah's children showing they were far separated form the lord if their kids would be so bold as to ridicule a prophet, not to mention "go on up, go on up" seems to be mocking even Elisha implying they had no regard for the lord of his prophets. At a time when lineage and was incredibly important to ancient Israel it makes sense the punishment for this would be the destruction of their seed as it is both a punishment and a way to save the messianic line for Christ to come.
