I think obnoxious "soiboy" behaviour largely a function of mass media, especially social media, where people are trained by the algorithm to optimize their whole personality toward producing engagement.

The rest can mostly be accounted for through deindustrialization of the west and living standards that are kingly compared to most of human history. Which isn't to say these are bad things, but immediate environment is no longer picking up the slack so 'traditional' modes of masculinity increasingly are the result of opting in (larp), or, more rarely, and overwhelming genetic predisposition toward that kind of behaviour.

It isn't like OP's pic couldn't do hard labour had he not been forced to do it all his life. You can be relatively strong without much muscle definition and a shit posture, labourers at the time probably weren't fit at all, but likely had strong shoulders and a good grip.
