Games of Strategy by Dixit and Skeath is an excellent intro textbook. It requires some mathematical literacy though (game theory is mostly math).

If you just want a light book for the layman, the Dan Ariely's Predictably Irrational is good.

Look up a syllabus from a respectable university’s intro class, and get whatever textbook they use.
