Im looking for books on zoroastrianism, in particular the theology and philosophy of it, not so much its history and anthropological aspects.

For Zoroastrianism:
I recommend Textual Sources of Zoroastrianism by Mary Boyce. Start with the Gathas. It is the only part of Zend-Avesta to go back to Zoroaster.
Afterwards, I recommend Mardanfarrox's Doubt Removing Book: http://www.avesta.org/mp/SGV.pdf
I also recommend using Encyclopædia Iranica a lot. However, I disagree with Encyclopædia Iranica on Zurvanism. Zurvanism was a real sect, and I recommend RC Zaehner for information on it.

She's a reputable scholar. I also read a bit of Piloo Nanavutty's translation of the Gathas, and it's not bad either. A lot of Parsee like his translation.

I haven't read that one yet because I read a lot of conflicting assessments of it.
I think the Gathas in general is very, very hard to translate, and I wish a circle of intellectuals would come together and do it.
I actually like this translation the most, but they only did a few parts:
