Depending on the publisher, I'm sure it's generally below 5%. But, I'm also sure that this is a case of knowing how to get published. If you have a good work and you present it right to the right people, you shouldn't have to worry about percentages. That's like worrying about hiring rates when you're over-qualified for a certain job you're applying to.
