I'm a tad confused by different editions of the story, I heard there were at least two. I read the book and Junji Ito's manga adaptation, which is really good and faithful.
However, there's a big difference, in that the manga omits the whole travel to Britain and the arrest in Ireland. Rather, Frankenstein just uses it as a cover, and works not far from home.
I'm curious if the plot goes like that in any edition of the book, as it was easily the weakest part. Having Frankenstein tour Britain pointless, besides being "fanservice" for the Anglo readers. And him being tracked down by the creature all the way to the Scottish islands, and then through Ireland back into Switzerland, well, it sounded just too far-fetched.

Yoy're not too far off. That's what happens in the prologue, and in the epilogue, as the story is mostly a narrative flashback.
Frankenstein, having lost everything, dedicates the rest of his life to tracking down the creature and killing him. The creature however, is not interested in breaking away, and plays a cat-and-mouse game, even leaving behind tracks to follow, and food for Frankenstein to eat.
They continue like that through Europe, Russia, and finally into the article. In the messages the creature leaves behind, he claims to be doing this to tortue Frankenstein through the hardships of his pursuit.
Frankenstein dies on the ship of the narrator. The creature sneaks in, not to kill his creator, but to lament the death of the only person he ever had in his life. He has a talk with the narrator, and claims now he'll make his way to the north pole, and once there will burn himself in a pyre, jumping off the ship.
