I like the idea of being really into Beckett but everything I have read of his just doesn't seem to strike me

That's pretty pretentious, man. If it doesn't click, it doesn't click. No one will judge you for not getting into him (so long as you don't talk about Beckett as if you had read him).

Personally, he is one of my favorite authors, but he can be quite difficult to get into because he tends to be very abstract, specially in his later work. Try to read and watch Waiting for Godot and/or Endgame. If they don't strike you, try reading Murphy. If that doesn't work, perhaps he is not your type of writer.

Not I and Krapp's Last Tape might be good starting points too. They are not as long as Godot and Endgame, and they give a good overview of what Beckett is about. Come and Go is also good.

You can find good productions in youtube for the four plays I recommended.
