When playing game boy color games on a back-lit screen, you do adjust the color saturation so it looks closer to what it did on a gbc screen don't you?
Even nintendo's own GBA SP makes the colors on these games look awful.

Nope, I like seeing them brighter and more vibrant than they originally were. Totally agree on the SP though. The main reason I kept a GBC and wormlight around for many years was because GBC games look like garbage on the SP screen. The opposite of emulation brightness, they look dark and weirdly saturated.

Something to note is that some GBC games use brighter palettes when played on a GBA because of the OG GBA's dark screen. So if you play those specific games on a GBA SP 101, you'll see washed out colors because the GBC is using the GBA palette instead of the GBC palette.

Accurate to the code yes, but not to the developer's intentions. The original GBC screen is washed out and colors chosen in the game's code are extra saturated to compensate for this. If you use back lit screens or emulate without compensating the saturation back down, you're seeing the wrong colors.

When super eagle and sai came out i was floored by how it looked in comparison to original sprites. I used to use it all the time on RPGs with fuckhuge enemies but I'm kind of disappointed that it took over 17 years for AI to improve upon the idea but its still not what I would consider to be perfect.

Wrong, the colors were selected based on how they would look when displayed by the GBC screen. Knowing the screen was dark and not backlit, games intentionally used very bright and saturated colors because they would end up dim and subdued when viewed on the console's actual screen. Displaying the exact RGB color value on a backlit screen is more accurate to the colors being sent to the screen, but it is not accurate to the intended output from the screen when viewed by human eyes.
