Molboros from all incarnations of FF which they appear. Every single status effect. I think paralyzing all of my party members wiped me more than anything else.
The flying propeller things in Zelda NES.
That one Caterpillar boss in Zelda SNES that continually knocks you down a floor so that you have to go back up to fight it.
Hunters from Resident Evil 1. They had a pretty decent chance of instantly killing you and while you had tools to deal with them, if you used them you might not have enough for the final boss fight.

I've actually come to really appreciate the Thiefbot. It's so sneaky and you need to be equally crafty to trap and kill it. It's all about looking through the map and thinking about good places to lurk in wait and ambush it, and then if you fail it's an adrenaline chase through the mines to get your quadlasers back. Not enough games have tough enemies like this anymore.

I loved the design around the enforcers and monks, but I agree they have FAR too much HP. Even in the ROTT remake, they made them have too much HP and a grind to fight against. (though there is an achievement for killing an enforcer with just a pistol)
