Not a whole lot. There was tons of censorship back then of anything that ratings boards might have deemed unchristian, and Nintendo of America had general anti-religious symbolism / anti-sex policies that gutted a number of NES and SNES titles outside of Japan.

The only thing that immediately comes to mind is the ability to solicit male prostitutes in Ultima VII, but that was of course removed from the SNES port.

One of the prime examples of censorship was Zelda.

On LttP they removed the cross from Link's shield.

When a Muslim wrote in to EGM noticing the Shahada in the Fire Temple in OoT in the gold cartridge, the follow up gray cartridges removed it and also removed the Islamic crescent from the Mirror Shield. The Great fairies looked like angels in Japan, but got changed to fairies in US.

They didn't want any butthurt. Although none had yet come up. Perhaps they were planning for bigger markets.

Rather, NoA made calculated moves to avoid butthurt. Nintendo's total removal of gay characters from third-party games would probably spark some outrage from gay gamers who wanted to have some representation in the media, but Nintendo was probably under the impression that allowing the inclusion of such characters at all would have prompted even greater outrage from religious groups who couldn't tolerate their existence. And since the religious groups outnumber the gay people, they of course are the only statistic that matters to the entertainment industry.

Nintendo probably based this logic on book bannings in school libraries, as gay characters are among the most protested subjects by disgruntled American parents.

No. The developers went out of their way to restrict the character romance scripts to opposite-sex interactions only. Although EE might have unlocked the option.

He might have meant that Nintendo didn't include the cross in ALttP due to carry-over regional differences and / or general laziness. i.e. Nintendo occasionally stopped including certain elements in their titles because said titles would eventually be localized for overseas release. Pokemon is a prominent example of this, as the changed Jynx sprite (blackface controversy) was actually carried over into Japanese re-releases of Pokemon games, even though Japanese audiences probably couldn't care less about that. OoT's GC re-release got the same treatment in Japan, as it retained all the censored graphics from the NA release.
