You can develop them at any point of your life. It's rare to get it as an adult, but it happens. You might eat peanuts all your life no problem and then suddenly eat a pack and end up in the hospital. Same with any other food or triggers, but the big 9 are the most common.
At least when it comes to nut protein based allergies it's thought to happen because your body is used to having parasites and fighting them. Because of hyper cleanliness, the immune system section responsible for fighting parasites goes hyper active and thinks nut proteins are parasites. That's one of the theories at least.
