I'm already impressed, they grow up so fast. The VLC suggestion is the equivalent of remuxing them with MKVToolnix with a fixed delay without needing to actually remux them if the subs have the same filename as the video, they will autoload in VLC/MPC-HC/MPV - anything that doesn't suck ass
Aegisub and more modern utilities like Subtitle Edit - although it may do fucky things to .ass formatting if you don't pay close enough attention can let you do more finetuned delays on specific parts - make all the subs before the OP x.xxx s earlier and all the subs after it x.xxx s later, etc.

It's not that complicated.
>"Oversold" mechanism
Bounces a coin back up if it's sold so hard it undershoots its next adjustment target. It is "absolute" in that it doesn't correct adjustment "towards" the right value, but directly to it.
>"Overbought" mechanism
Pushes a coin price down if bought up past its next adjustment target. It is not absolute and only corrects downwards "towards" the adjustment value. Allows SOME player driven inflation before green days as a result. Doesn't act as strongly or at all on downwards adjustments, allowing player driven inflation right before red days too.
Compound both, and the upward action of the oversold corrections + player driven buys outweigh the downwards overbought corrections. I suspect that sub-ticks also affect adjustment more strongly than subticks "falling off".
TL;DR It's by design. And is seriously a non fucking issue. Game or not, you can't have fiat + free market without inflation. Everything about this game is fiat - not just the currency, but the stocks too. Hyperinflation is a problem. We don't have hyperinflation right now. Not yet.
