I don't necessarily hate those games, and i don't think Minecraft has a good amount of variety to it, but the main point is why would someone watch this Kuma person when their favorites chuubas like Hololive or >vshojo are already playing all these games?
I feel like one of the main things that gets me to check out a new chuuba is that they play different games from ones i'm already watching or at the very least have something they do different. There doesn't seem to be much point following 20 chuubas who all play the exact same games over and over, there has to be a point where you get tired of Chuuba#400 plays APEX for 8 hours 3 times a week.

The interesting thing about this is you kind of need to hit a medium between popular game and dead game.
Granted, as a new streamer people probably aren't too interested in seeing yet another streamer play APEX, Phasmo, Valorant, Genshin.
However at the same time playing completely dead games with no viewers is not going accomplish anything either.
You need to find a niche that people are going to find interesting and remember you for.
Symmakos and Melchior as an example are RTS focused and it seems to be working pretty well for them so far.
