Cornbread is literal grainlet cope from people who can't into yeasted breads. It's fucking brainlet "bread" when really it's a cake and the only reason it endures is because it was never good so even when some schmuck fucks up cornbread they still say "hey this is pretty good cornbread" because the standard is so goddamn low

I've had cornbread everywhere from small family bakeries in Missouri and Arizona to upscale pastry shops in LA, the universal status quo of "damn this is just objectively inferior to an actual good piece of cake" endures no matter the location. And yes I've attempted to make it myself out of boredom, perfectly cooked, fresh corn and high quality cornmeal, only organic ingredients, baked to an exact internal temperature of 312F and it was still objectively inferior. "quick breads" are literally just cope for people who can't admit that they're baking cakes and not real yeasted bread.
