There are two reasons:
>The EN girls immediately did their own MC server because they were under a collab ban. Early on until very recently, this was a realms world (aka not an actual server). What this means is not only do mods not work, only 10 people at a time were able to be online at once and linking servers (which needed mods) was impossible until they very-recently switched.
>The reason for the Ender Dragon goal wasn't because of a "seemingly fitting end" for soloENcraft, but because if the JPs go onto the server with things like shulker boxes and various other ender-item stuff, the mod will ALSO link the destination to The End to the EN server too. To prevent this, they had to establish their own The End world so that when the link occurs and somebody travels there, they borrow the host's The End instead of linking their own permanently. It's a quirk of the plugin used itself and not something that would normally happen.

I hope they do end up using the torii gates
