The spikes seem to be from YouTube's CCV counter flipping out and dropping chunks of viewers. The CCV is supposed to report how many viewers are at the "live" chunk of a stream.

There's a lot of speculation about why it drops chunks of viewers for some streams and shows the regular bumps, but no real reason is confirmed. From the experiment above, we can say that it has nothing to do with adblock or user activity. As long as a video is playing, even in the background, it can get counted.
