I would love if you could point me towards an example of a streamer asking people not to do this. It's meant to be analogous to nodding your head while someone is speaking to indicate you're paying attention. I've never once seen a streamers get mad at:

We are watching totally different streams. Even FPS streams don't get that many basic comments, except when something exciting happens, which isn't frequent.

There is a difference between 感謝 and ありがとう but it's minimal. You could think of the former as being more formal/polite but that isn't necessarily a good thing. 感謝 is close to ありがたい if anything so that might be why you don't see it too often. I've only heard one Vtuber use 感謝 to thank superchats and he's kind of a quiet and reserved guy so like most ways of speaking it can come down to personality.
