I love ultrakill, I bought early access day 1 cause the demo was incredible.
I haven't played it too much though cause I'm kinda waiting til they finish the game.

I think morrowind would be cool, I grew up playing it on xbox, I wouldn't mind giving it an actual playthrough for once.
Oblivion was a game I sank many hours into when I was younger, I don't think I ever completed the campaign once.

Otherwise I'd suggest Ecco the dolphin. I rarely find content there so I've actually watched some Japanese vtubers VODs on twitch despite the language barrier for some nostalgia.
It's really easy to miss shows on Ecco the dolphin because there's so little content there being freshly produced.
Depending on your audience you could dominate the category and say you were the top English vtuber (only English vtuber) in a twitch game category.

Ecco is a game I could never beat as a kid but I would be down to play it, the Genesis was my favorite console growing up so I have a lot of favorite games on it.

Turns out there's fresh content in Ecco the dolphin. It had just been awhile since I checked it out. Try out eternal champions. That game is endless fun without much need for spending hours solving puzzles. You might even get a collab with shimada Tiger.
