I’ve always suspected they prerecord the mocap / audio and then edit it to smooth the performance out. Even top dollar mocap doesn’t look that good without multiple takes and editing. I think if they wanted people to believe these are done live, they have to have realistic looking mocap, imperfections and wonkiness left in.

I'll believe it's the actual talents/not pre-recorded the first time one of them messes up. As in, they start laughing during a song and mess up a little or they trip and play it off.

During one of the Christmas 3d live, there were few errors.
Towa was shown resting and drinking water on the side while nene/suisei were performing. I remember someone forgot the dance spot/routine during the performance as well during that live.
However, suisei push for Live for her 3d (realistically, it's probably live singing and most of the routine but a few dancing recording here and there, especially with guests involved)

I don't think there's any reason to believe, at least with Hololive, that they use professional dancers though. There's no reason for them to be bringing up their dance lessons during zatsus if they weren't ever going in the first place.
I wish they would be a little more transparent about the pre-recorded stuff though. Some talents don't like lying directly or through omission about it.

They all do their own dancing, but you can definitely tell some put more effort into it than others. Wawa is an idol junkie and so psychotically parasocial with her community that she'd probably do nude streams if she could get away with it.

For connect the world it was totally their own dances. If you notice only Kiara, Bae and Gura dance and Kiara and Bae have dancing backgrounds and we've seen Gura dance like she did on VR chat. Mori faked a guitar so she didn't have to dance, Ame just ran around and Ina hardly moved.
One other thing to consider is since they aren't doing it live, they can much more easily just pick the best dance they did and they don't have to worry about breathing because the singing was recoded separately anyway

Cover spent 2 billion yen on a motion capture studio not because their talent has some world or even national class dancing ability worth capturing. It's because they can use the investment to guilt trip the talent into putting effort into dancing lessons and thereby exert some lifestyle control on what would otherwise be hikki femcels who never leave their room.
